  1. Dark Sugar Pepper Rub:

    • Combine all ingredients together.
    • Rub over rump cap, roast covered for 3 hours at 140°C. Uncover for the last 30 minutes of cooking.
  2. Chef’s Tip:

    • The benefit of dark rubs is that you can have them ready on hand for application. Simply prepare a big batch, store it in an airtight container and use it anytime!
