Marinade:

  • Sugar 120 g
  • Black pepper crushed 5 g
  • Sesame Oil 30 ml
  • Garlic, puree 120 g
  • Chilli green, pureed 80 g
  • Papaya, fresh 250 g
  • Soy Sauce 300 ml
  • Water 100 ml
  • Beef, ribs 4 kg

Salsa:

  • Tomato, diced 300 g
  • Onion, diced 100 g
  • Pineapple, diced 150 g
  1. Marinade:

    • Combine marinade ingredients and pour over the ribs to marinate for 24 hours.
    • Remove from marinade and flame grill until cooked through, basting regularly.
  2. Salsa:

    • To make the salsa, toss together tomato, pineapple and red onion.
    • Serve the ribs garnished with salsa.
